Starmix cookies

These little delights with lemon icing and HARIBO Starmix are very easy to make yourself.

Ingredients

For baking:
Baking paper

For the cookies:
250g cake flour
3 tsp. baking powder
100g sugar
1.5 tsp. castor sugar
1 pinch salt
100g soft butter or margarine
2 eggs (size M)
100ml milk

For decorating:
300g icing sugar
5 tsp lemon juice
about 150g HARIBO Starmix

1. Prepare the cake

Mix the flour and baking powder in a bowl. Add remaining cookie ingredients and mix on low speed for 1 minute, then on high speed for 2 minutes until smooth.

2. Off to the baking tray

Using two teaspoons, place about 12 heaps of half the mixture, not too close together, on the baking tray. Place the tray in the oven and bake at 180 degrees for about 17 minutes. Repeat this step with the rest of the mixture, then place the cookies on a cooling rack and leave to cool.

3. Prepare the icing

Mix the icing sugar with the lemon juice to make a thick glaze. Place a small dollop of icing in the middle of each flat side of the cookie and spread with a table knife.

4. Decorate and snack

Gently press the HARIBO Starmix into the icing, allow to set and enjoy!
