Unicorn Cupcakes

What you'll need

Ingredients (12 cupcakes)

For the batter:
2 cups wheat flour (250 g)
½ cup sugar (100 g)
1 packet vanilla sugar
2 tsp baking powder
4 oz butter-flavored grapeseed oil (or another neutral oil)
6 oz milk (180 ml)
2 eggs


For the frosting:

½ cup soft butter (125 g)
¾ cup powdered sugar (100 g)
Pink food coloring
Blue food coloring
8 oz double cream cheese (200 g)


For the decoration:

1 bag HARIBO Goldbears Wild Berry
6 tbsp confetti star sprinkles

Instructions

1. Preparation

Preheat the oven to 350°F top and bottom heat. Line a muffin tin with 12 paper cases.

Mix the flour, sugar, vanilla sugar, and baking powder in a bowl. In another bowl, mix the oil, milk, and eggs, then add to the dry ingredients and mix quickly.

2. Baking

Divide the batter evenly among the 12 cases, then bake in the oven for 30 minutes.
Remove from the oven and leave to cool completely on a wire rack.

3. Frosting

In the meantime, for the frosting, sift the powdered sugar into the softened butter in a bowl and then beat with a whisk for a few minutes until light and creamy. Divide the cream into two bowls and stir in some pink food coloring and some blue food coloring.
Stir the cream cheese until smooth and quickly stir 100 g into each of the two creams.

4. Now things are getting colorful

Fit a piping bag with a star nozzle. To make filling easier, place the piping bag in a tall glass and fold down the rim. Fill one side of the piping bag with the pink frosting and the other with the light blue frosting. Then pipe a pretty pink and light blue swirl onto each cupcake.

5. Decorate

Decorate each cupcake with confetti star sprinkles and Haribo Goldbears Wild Berry.
