Unicorn Rainbow Cake

A cake bursting with color: With HARIBO, you can create a rainbow that’s sure to make every smile just a little bit bigger!

What you'll need

1 springform pan, 10 x 2.5 inches

Ingredients

For the batter:

1 cup softened butter (200 g) + 1 tbsp for greasing
¾ cup sugar (170 g)
1 packet vanilla sugar
1 pinch of salt
3 eggs (at room temperature)
2 cups flour (250 g)
¾ cup ground almonds (100g)
3 tsp baking powder
1 lemon
7 tbsp milk (100 ml)


For the frosting:

10.5 oz white chocolate (300 g)
5 oz cream (150 ml)
Blue food coloring


For the decoration:

2 bags HARIBO Unicornilicious
Confetti star sprinkles

Instructions

1. Baking

Preheat the oven to 350° F top and bottom heat. Line the bottom of the springform pan with parchment paper and grease the sides with a little butter.

Wash the lemon in hot water, finely grate the zest and squeeze the juice. Mix the flour, almonds and baking powder in a bowl.

Cream the softened butter with the sugar, vanilla sugar and salt in a food processor or with a hand mixer. Add the eggs one at a time, beating for 1 minute after each addition.

Stir in the lemon juice and zest, then quickly add the dry ingredients and milk alternately.

2. Into the Oven

Pour the batter into the springform pan and bake in the oven for 45 minutes. Let cool on a wire rack for 15 minutes, remove from the pan, then let cool completely.

3. Prepare the ganache

Melt the white chocolate slowly in a double boiler. Heat the cream, but do not boil. Stir the cream into the chocolate. Transfer the resulting ganache to a bowl, cover with plastic wrap, and refrigerate for 30 minutes.

In the meantime, sort the Unicorns by color.

4. Decorate

Beat the frosting for 5 minutes with a food processor or hand mixer. Add a drop of blue food coloring at a time until you reach your desired hue.

Once your cake has cooled, place it on a cake plate and gently spread the frosting.

Arrange HARIBO Unicorn-i-licious unicorns on the cake in a rainbow pattern – first red, then orange, then yellow, then green, then blue and finally purple. Finish with sprinkling some confetti stars onto the cake.
