For the dough:
- 100 g flour
- 40 g powdered sugar
- 50 g ground almonds
- 1 pinch of salt
- 1 egg yolk
- 75 g soft butter
For the filling:
- HARIBO fruit gummies (use only ones without the white foam layer)
- Make the dough: In a mixing bowl, combine the flour, powdered sugar, ground almonds, salt, egg yolk, and butter. Knead everything into a smooth dough. Wrap in plastic wrap and chill in the refrigerator for 1–2 hours, until firm.
- Preheat the oven: Set the oven to 180 °C (350 °F) top/bottom heat. Line a baking sheet with parchment paper.
- Shape the cookies: Roll the dough into walnut-sized balls and place them on the prepared baking sheet. Using the handle of a wooden spoon, press a small indentation into the center of each cookie. Bake for 10 minutes.
- Add the filling: While the cookies are baking, finely chop the HARIBO gummies. Remove the cookies from the oven, fill each indentation with a few gummy pieces, and bake for another 2–3 minutes, until the gummies have melted slightly.
- Cool and enjoy: Let the cookies cool on a wire rack before serving.
