HARIBO liquorice – the ingredients

Without the liquorice bush (Glycyrrhiza glabra) there would be no liquorice. The blue-lilac flowering bushes achieve a height of one to two metres. The liquorice bush is primarily at home in the Mediterranean region and Central Asian countries.

The heavily branched, finger thick roots which have runners that can extend for up to eight metres are harvested in late autumn. A complex procedure produces a thick, black liquid from the root, the starting point for liquorice production.

Additional ingredients

Depending on the product being produced, ingredients such as sugar, glucose syrup, wheat flour, modified starches or gelatine, salt and other flavourings are added to the raw liquorice.

The consistency and formability of liquorice is controlled by the proportion of starches or gelling agents added. The relevant compositions of all these ingredients results in the various HARIBO liquorice goods.


Liquorice confectionary

To create liquorice confectionary, pressed liquorice is combined with sugar pastes in various different flavours. This creates sweets with a number of layers, as in the liquorice/coconut combination, with real coconut, one of the absolute classics of HARIBO.

To make dragées a liquorice core is coated with a layer of sugar.

Salty liquorice

Salty liquorice is a speciality which contains a higher salmiak proportion of up to two percent. Generally, such products are also candied.


Stevi-Lakritz Stücke

STEVI-liquorice – without the addition of sugar and in comparison to a conventional liquorice 40% less calories. Sweeten with steviol glycosides STEVI-liquorice is very low in calories and rich in fibres. With liquorice in combination with herbs and aniseed-flavour STEVI-liquorice becomes enjoyable aromatic.
